Cilantro Lime Chicken

Need a quick, easy, fresh, lean, clean and DELICIOUS dinner idea? Try what I made last night: Cilantro Lime Chicken. It’s as simple as marinating the protein for 30min in the fridge, grilling & serving as you please. I tend to eyeball and make up my marinades as I go and this one was fantastic:

  • Juice & zest of 2 fresh limes
  • 2T olive oil
  • 1 large garlic clove, grated
  • 3T fresh cilantro, chopped
  • salt & pepper
  • 1 package skinless chicken tenderloins (I get the fresh ones at Costco) or the equivalent of 2-3 boneless, skinless chicken  breasts
  • Extra lime & cilantro for garnish

1. MIX all of the ingredients except for chicken in a freezer bag.

2. ADD chicken and MARINATE for at least 30min in fridge.

3. GRILL chicken or use a grill pan on the stove on medium high heat

4. SQUEEZE fresh lime over chicken and add extra cilantro to taste before serving

After the chicken rests, chop it up and serve however you like! Here’s what I ate last night:

  • Big handful of broccoli slaw as my base
  • Cilantro lime chicken
  • Homemade guacamole (avocado, lime, red onion, plum tomatoes, cilantro, salt & pepper)
  • Homemade jalapeno peach salsa (fresh peaches, fresh jalapeno, red onion, lime and cilantro)
  • Grilled onions
