Overnight Kale Salad

Ever filled a mason jar with goodies to make overnight oats? Of course you have! Why? Probably because the sweet, creamy, oat-y concoction is a delicious, no-fuss fuel option ready the moment you wake up.  But have you tried overnight salad? Sounds like a weird concept, I know, but I make it all the time for a quick grab-and-go veggie fix. Most of the time, making salads ahead is a no-no (read: soggy lettuce!). But if you swap in kale for your base, it actually tastes better if it has time to break-down in an acidic liquid. All you have to do is combine the ingredients, throw it in the fridge, sleep (or wait a few hours), and its done! A few options I love:kale

Lowest Calorie & Sodium Option: 

  • Rice Wine Vinegar (can be mixed with pure balsamic vinegar)
  • Fresh Ground Pepper
  • Red Onions
  • Cucumbervinvin 2

Other variations:

Instead of adding just plain vinegar, mix additional ingredients together in a dressing and then pour over veggies. Options include olive oil, salt, sugar/honey to balance the acidity of the vinegar, lemon (to replace some of the vinegar), fresh herbs, Parmesan cheese, Gorgonzola, fresh ginger, or whatever you want!
