DIY Chocolate Bars
There I was: sitting on my couch on a Friday evening, sipping some red wine and craving an after dinner, weekend treat. As I panned through my emails on my phone, one instantly caught my eye. It was this week’s Tone It Up recipe. The subject? CHOCOLATE! I scanned through the recipe and quickly realized I had all of the ingredients in my pantry. Without hesitation, I popped out of my chair and got busy in the kitchen.
The gals at TIU created this recipe for a healthy, all natural, vegan chocolate bar that is creamy, rich and oh so delicious. The nutrient rich cacao will nourish you, the healthy fats from the coconut oil will put an end to late night cravings and the protein will keep you full and help repair muscles. This chocolate is guilt free and 100% healthy! They posted recipes for a basic version, one with coconut and one with almond butter. I couldn’t decide between them so I made a coconut almond butter chocolate bar batch.
Here’s what you need:
- 1/3 Cup Coconut Oil, room temperature
- 1/4 Cup Almond Butter
- 1 Packet or 1 scoop of Perfect Fit Protein or protein powder of your choice
- 1/3 Cup Cacao Powder
- 1/4 Cup unsweetened shredded or flaked coconut
- 1/2 tsp Chia Seeds (I didn’t have these so I say this is optional)
- pinch of sea salt
- wax paper
Directions(Makes 10 Servings)
Once smooth, spread flat on a sheet of waxed parchment paper, making sure you spread out your chocolate mixture at least 1/4″ thick. Sprinkle on some unsweetened shredded coconut and extra sea salt (if you like the salty sweet flavor profile like I do!)
Place in the freezer for about 15 minutes until set. Cut into 10 pieces and enjoy one!
TIP ~ because these ingredients are all natural, this bar must be kept at cool temperatures, otherwise it will melt after about 10 minutes. Once you cut your bars, keep them in a sealed container in your fridge.
