Let Them Eat [pan]Cakes!

As a brief intro to the nutrition plan I follow (and absolutely swear by!), I’ll highlight one of my favorite recipes: PANCAKES! Yep, that’s right, I eat pancakes almost every day and can have them whenever I want. On Sunday afternoons, I prep for the week by making a couple batches to get me from Monday to Friday. Be warned: mine don’t exactly look as pretty as they probably could but believe me, they taste awesome! Here’s what they are SUPPOSED to look like:

Yea, yea. You know we’ve all had our “ummmm….that’s not what it looked like on Pinterest” cooking moments.

Anyway, taste is all that matters, right? These delicious treats are the unique creation of the Tone It Up nutrition plan using the protein they created: Perfect Fit.  You can feel free to substitute any protein powder you choose but I highly recommend theirs for several reasons: 1. its organic (literally has 5, squeaky clean, plain as English ingredients) and 2. its brown rice protein (great for those of us that don’t mesh well with whey or dairy).  The recipe is below – enjoy!

Perfect Fit Protein Pancakes:

  • 1/4 cup egg whites
  • 1 scoop Perfect Fit Protein
  • 2 Tbs vanilla almond milk (unsweet)
  • 1 tsp cinnamon
  • 1 Tbs ground flaxseed
  • 1/2 banana (the riper the better!)
  • optional: 1 Tbs plain non fat greek yogurt (it makes them fluffier!)
  • handful of fresh or frozen berries

In a bowl, mash up the banana with a fork until almost creamy. Mix in all other ingredients. Pour into a pan that has been sprayed with canola oil cooking spray ~ heat on medium. Cook one side until you see the little bubbles.. just like cooking any pancake! Flip over (careful!) and cook on the other size until the middle is done.

Top with two sliced strawberries and optional powdered stevia.
